Spaghetti alla Carbonara with Smoked Beef

English Version

Ingredients:
250 g spaghetti (8 3/4 oz)
5 slices smoked beef
1 egg
1 egg yolk
30 g parmesan cheese or pecorino romano (around 1/4 cup)
Extra parmesan cheese for sprinkling
Salt, Black Pepper, Olive oil

Process:
  • Cook spaghetti in a large pot with water, season it with salt. NO OIL PLEASE!
  • In the meantime, cut the smoked beef into small pieces and saute the smoked beef in thin layer of olive oil.
  • Once the smoked beef is crispy around the edges, take it off the heat and leave it to cool for few minutes.
  • Now let's make the carbonara sauce: In a large bowl put egg and egg yolk, mix them together until completely mix. Add in parmesan cheese, black pepper and salt if you like a little bit salty. Mix it in really well. Now add in the smoked beef with the oil. Mix everything together. And the sauce is ready.
  • Once the spaghetti cooked al dente, drain it, add it directly to the carbonara sauce. Mix it together.
  • The carbonara sauce is perfect until the eggs present a slightly granulated appearance without being as thick as scrambled eggs.
  • Sprinkle it with a little bit of parmesan cheese. e BUON APPETITO!

Mushroom & Cheddar Stuffed with Eggplant

English Version

Ingredients:
2 medium eggplants (18 - 20 cm)
5 tbsp butter
200 g sliced champignon mushrooms
3 shallots, finely minced
100 g bread crumbs
200 g grated cheddar cheese, divided
salt and pepper to your taste

Process:
  • Slice eggplants in half crosswise, and then cut them in half lengthwise.
  • Carefully scoop out and chop flesh, leaving the skin intact. 
  • Keep the chop flesh eggplants for stuffing.
  • Place in a baking dish and set aside. Preheat the oven to 190 degrees C.
  • Heat butter in a frypan over medium high heat. 
  • Cook and stir shallot, eggplant, and mushrooms until tender.
  • Stir in bread crumbs and 100 g cheddar cheese.
  • Once it's cooked, fill eggplant shells with stuffing.
  • Sprinkle with remaining grated cheddar cheese.
  • Bake in the preheated oven for 15 to 20 mins.

Vanilla Custard Sauce

Today I'm going to share a Vanilla Custard Sauce Recipe, which is the perfect pairing with apple crumble. I've always enjoyed custard sauce ever since I was little. So, let's make some beautiful rich creamy vanilla custard sauce.


Ingredients:
450 ml creamy milk (1 3/4cups)
1 vanilla pod
4 medium egg yolks (room temp)
2,5 tbsp caster sugar
1 - 2 tsp corn flour

Process:
  • Pour the milk into a medium size pan, and split the vanilla pod down the middle, scrape a few of the seed into the milk and place the pod into the milk
  • Heat the milk up until it's boiled, then take it off the heat. Cover it with the lid, let it infuse with the vanilla for about 15 mins.
  • While the ingredients are infusing, beat together the egg yolk and custard sugar until light and smooth. Add cornflour and stir until smooth.
  • Remove vanilla pod from the milk and pour the warm milk onto the yolk in the steady stream, stirring constantly.
  • Pour the mixture back into the pan and stir constantly on a medium heat.
  • Don't let the mixture comes to the boil as it will scramble the eggs.
  • The custard is ready, when it's thick enough to coat the back of the spoon
Note: 
Custard sauce is perfect for pouring over apple pie, apple crumble or puddings. Or as I like to do, I pour it into a small bowl or ramekin, sprinkle it with a little bit cinnamon and nutmeg and allow it to chill and it's beautiful as a cold custard dessert.

Saus Custard sangat cocok sebagai siraman saus diatas apple pie, apple crumble, dan berbagai puding, atau tuang ke dalam mangkok kecil atau ramekin, taburi kayu manis dan pala bubuk, biarkan dingin dalam lemari es hingga jadi puding custard.

Apple Crumble

Bahan Isian:
4 – 5 cooking apples (granny smith atau yang warna hijau)
60 g gula kastor
1 sdt bubuk kayu manis (atau sesuai selera)
1 batang kayu manis
Perasan air lemon dari ½ buah lemon
Parutan kulit lemon secukupnya
70 – 75 ml air

Bahan Crumble:
230 g tepung terigu
170g butter (potong dadu kecil)
50g oats/muesli
110g gula kastor
Bubuk kayu manis secukupnya untuk rasa

Cara Membuat:
  • Kupas dan potong dadu apel dan rendam dalam air selama 5 -10 menit, agar apel tidak menjadi kecoklatan.
  • Kemudian masukkan apel kedalam panci berisi air, beserta gula kastor, bubuk kayu manis, kayu manis batangan,
  • air lemon, parutan kulit lemon, dan masak hingga shimmer (bergelembung dibagian pinggir tapi tidak sampai mendidih).
  • Sementara itu, pada mangkok ukuran besar, campur tepung terigu, gula kastor, kayu manis dan butter.
  • Aduk dan remas campuran adonan dengan tangan, hingga semua bahan tercampur dan adonan berbentuk seperti remahan roti.
  • Masukkan oat/muesli dan campur hingga merata.
  • Saat apel sudah shimmer, tuang pada loyang panggang, lalu taburi dengan adonan crumble secara merata di atas apel.
  • Panaskan oven pada suhu 180°C/350°F/Gas 4. Panggang selama 20 – 30 menit atau hingga bagian atas nampak sedikit keemasan.

Ingredients:
4-5 cooking apples (green ones)
60 g caster sugar (2,1 Oz)
1 tsp cinnamon (or to your taste) 
1 cinnamon stick
Zest and juice of ½ lemon
70 – 75 ml water (2.5 Oz)

For The Crumbs:
230 g flour (2 cups)
170 g butter (6 Oz)
50 g oats/muesli (1/2 cup)
110 g caster sugar (1/2 cup)
Cinnamon to taste

Process:

  • Peeling and cutting the apples and place them in some water to stop them from browning for about 5 - 10 mins.
  • Now put them in the pan with caster sugar, water and cinnamon, simmer for full 7 mins.
  • Meanwhile, add flour, caster sugar, oat/muesli and cinnamon in a bowl, rub it together into a fine bread crumbs.
  • Once the apple simmered, pull them into the baking tray and spread the crumble evenly on top of the apples.
  • Preheat your oven to 180°C/350°F/Gas 4. Pop in the oven for 20 - 30 mins or until lightly gold on top.
