Spaghetti alla Carbonara with Smoked Beef

English Version

Ingredients:
250 g spaghetti (8 3/4 oz)
5 slices smoked beef
1 egg
1 egg yolk
30 g parmesan cheese or pecorino romano (around 1/4 cup)
Extra parmesan cheese for sprinkling
Salt, Black Pepper, Olive oil

Process:
  • Cook spaghetti in a large pot with water, season it with salt. NO OIL PLEASE!
  • In the meantime, cut the smoked beef into small pieces and saute the smoked beef in thin layer of olive oil.
  • Once the smoked beef is crispy around the edges, take it off the heat and leave it to cool for few minutes.
  • Now let's make the carbonara sauce: In a large bowl put egg and egg yolk, mix them together until completely mix. Add in parmesan cheese, black pepper and salt if you like a little bit salty. Mix it in really well. Now add in the smoked beef with the oil. Mix everything together. And the sauce is ready.
  • Once the spaghetti cooked al dente, drain it, add it directly to the carbonara sauce. Mix it together.
  • The carbonara sauce is perfect until the eggs present a slightly granulated appearance without being as thick as scrambled eggs.
  • Sprinkle it with a little bit of parmesan cheese. e BUON APPETITO!
